Quick & Easy Lunch for the Kids- Hula Pizza

Need a quick, easy, and fairly healthy lunch for the kids?  Look no farther!  I got this recipe out of the Biggest Loser Cookbook and tweaked it a little bit. 


Hula Pizza Ingredients:

Tortillas
Crushed Pineapple
Mozzarella Cheese
Bacon Bits
BBQ Sauce



Layer the ingredients as follows:  Tortilla, Sauce, Cheese, Pineapple, Bacon Bits.  Bake at 400 degrees for about 10 minutes for until done!  Enjoy!

These semi-healthy, boxed blueberry muffins got jazzed up with a half a cup of the pulp from my juice at breakfast. I had to eat one to make sure they were edible for my kids!

Kale Chips



Kale Chips

These Kale Chips melt in your mouth!  I didn't think these would be that great, but to my surprise, they were excellent!

Ingredients:
Kale Chips
Seasoned Salt
2 Tbsp Oil

Preheat your oven to 350 degrees.  Cut Kale off of the thick rib.  Slice into bit size pieces.  Place on a cookie sheet in a single layer.  Sprinkle oil over top and then lightly sprinkle with seasoned salt.  Bake at 350 for 10 minutes.  If you bake any longer, they may get a burnt taste.  Enjoy!

Participating in Studies


Do you have a local university or college nearby?  Have you ever considered participating in a study?  Here in Virginia, the local University places ads in the Sunday paper, advertising upcoming studies and also to recruit volunteers.  Two of my children, along with myself, are participating in a Autism Study at the local University and we are getting paid $20.00/hour!  We went for a tour this morning and each of us made $20.00 for less than 1 hour of time!  The study pays up to $360.00 per person. There are lots more appointments, interviews, and MRIs to come!  I am excited to help the University with their research, while making money at the same time.
